This is a delicious breakfast idea. It is rather unconventional, but think of the ricotta as replacing a yogurt and the papaya as replacing the berries, and the idea become a little easier to … digest. (That’s not just clever punning, papaya is excellent for digestion!)
1/4 Papaya, cut into bite-sized chunks
1 cup light Ricotta cheese, whipped
1 tsp raw Honey
1 tbsp Flax Seed
Simply scoop out the ricotta into a serving dish, mix with honey, top with papaya, then sprinkle the flax seed over top. That’s it!
Not only does this taste deliciously rich, there is enough protein in this meal to keep you feeling full until lunchtime.
