3 Lime zests
4 cloves Garlic, minced
1/4 tsp Salt
1/4 tsp Pepper
2 Tbsp + 1 tsp Coconut oil, melted, divided
4 Tilapia fillets (5 0z each)
8 cups fresh Spinach
1/4 cup + 1 tbsp Lime juice
Heat a large saucepan over medium-high heat. In a small bowl, combine the lime, zest, garlic, salt, pepper, and 2 teaspoons of the coconut oil.
Coat the tilapia fillets with the oil mixture on both sides. Place the fillets in the pan and cook 3-4 minutes per side, or until crispy and golden.
In a large bowl, mix the spinach with the remaining teaspoon of oil and 1 tablespoon of lime juice. Divide into four servings and top each with a fillet. Drizzle with lime juice and garnish with lime wedge and extra pepper. Enjoy!
