Turkey Burgers with Feta and Red Pepper

This puts an interesting Greek spin on the traditional hamburger. It packs a surprising amount of flavour for how few ingredients are required!

This recipes makes 12-13 burgers.

 

 

 

Ingredients:
2.2 lbs extra lean Ground Turkey (2 packs)
2 Eggs
3/4 Red Pepper, chopped very small
4 3cm cubes of Feta Cheese, crumbled
3 cloves Garlic (garlic lovers feel free to add 2 more)
Salt and Pepper

Toppings:
Baby Spinach leaves
Cucumber slices
Lemon-Greek Yogurt (1/2 cup Greek Yogurt mixed with 2 tsp Lemon Juice)

Mix all burger ingredients together and form into small patties. Cook over medium-high heat, 8 minutes each side, covered.

Serve with toppings on whole wheat hamburger rolls.

I like this burger with some sweet potato fries and a Greek salad of romaine, tomatoes, feta, and olives.
